The Boars Head Culinary Education Program is not a culinary school, but rather an intense hands-on training program designed to refine and develop the skills necessary to be successful in any establishment in the food and beverage industry. The program is meant to train and challenge apprentices in all aspects of food production, furthering their knowledge of classical cuisine and modern techniques.


The Program:


The Boars Head Culinary Education Program is a two year program that teaches apprentices skills through a mix of lectures, practical demos, and hands-on rotations in different venues and outlets on the property. The 2 year, 4,000 hour program covers 10 stations with ACF directed competencies that must be met.


By the end of the program individuals will have developed skills in an array of areas including: menu planning, stocks, sauce making, gastronomy, classical cuisine, regional and international cuisine, food and wine pairings, butchery, cold food displays and leadership. At the end of the program students will take a written and practical exam off property, depending on level of experience graduates may take the Certified Culinarian exams or the Certified Sous Chef exams, certifications are provided by the American Culinary Federation and are the only certifications recognized by the US Department of Labor.
