Our Culinary team has an opening for a Garde Manger Lead Cook. You will support our Garde Manger Chef daily planning and production of all cold meals served from the kitchen. This position will also assist the Garde Manger Chef with ensuring that all recipes are adequately maintained and inventory is properly stocked.

 Schedule:

  • 6:00 am 3:00 pm. Weekends and Holidays are included.

 Requirements:

  • Prepare cold food items according to the Boars Head recipes specifications, monitoring taste, visual appeal and portion size
  • Responsible for proper production of cold food items working efficiently to achieve maximum productivity and cost control
  • Assist Garde Manger Chef in maintaining adequate food inventory levels
  • Assist Garde Manger Chef in maintaining recipes
  • Maintain a clean, neat, orderly, safe and sanitary work environment
  • Ensure that health and safety standards are followed and food products are properly stored and rotated in assigned workstation

 

Qualifications:

  • 1 plus years of experience as a Garde Manger Cook
  • Basic knowledge of large volume food preparation and Garde Manger plate and platter presentations
  • Proper food portioning skills
  • Basic food purchasing and receiving knowledge including ability to read invoices and write requisitions
  • Basic knowledge of keeping inventory
  • American Culinary Federation Certified Cook/Culinarian desired
  • State Food Handler Certification desired
